Ingredients

50g Corn Oil
60g Milk
70g Low Protein Flour
1/4tsp Salt
5 Egg White
5 Egg Yolk
1 Whole Egg
1/4tsp Cream of Tartar can replace with fresh lemon juice
70g Granulated Sugar
30g Black Sesame Powder can replace with mashed oreo biscuit

Black Sesame Ogura Cake 黑芝麻相思蛋糕

Beat 5 egg yolk and 1 whole egg until it form bubbles

Add in corn oil follow with fresh milk into Step 1 and mix well.

Sift low protein flour and salt into the egg yolk batter (Step 2) and mix until it form a smooth batter. To avoid over mix the batter, can sift the batter if it has small lumps in the batter. Cover the batter and set aside.

Add the cream of tartar/ fresh lemon juice into the egg white and start beating the egg white with high speed. Once it form some bubbles, put in 1/2 of the sugar and continue beating and add the remaining of the batter before it form soft peak.

Beat the egg white for 30 seconds with low speed so that it form early stage of hard peak.

Add 1/3 of the egg white batter (Step 5) into the egg yolk batter (Step 3) and fold evenly.

Pour all the folded egg yolk batter (Step 6) into the remaining beaten egg white and fold evenly.

Divide the batter into 2 mixing bowl. Add in the black sesame powder in one of the portion and mix well.

Pour the black sesame batter into the cake mould (7"/8" square cake mould) follow with the plain batter.

Bake the cake with steam bake method in a preheated oven. Use low heat at 140 degree for 20 mins and upper and low heat at 120 degree for 80 mins.

Took out the cake immediately once it's finish baking. Let it cool down for 5 mins with the upside down position and turn it back to wait for it to be completely cool down. Keep in the fridge for at least 2 hour before serve.
